1 ½ lbs. large scallops
1 tbsp. olive oil
1 tbsp. butter
1 tsp. garlic powder
1 tsp. Kosher salt
½ tsp. freshly ground pepper
1 tbsp. fresh lime
1 tbsp. lime zest
Heat the oil and butter in skillet. Pat the scallops dry with paper towels and add to the hot oil. Sprinkle with garlic powder, salt and pepper. Sauté the scallops for 2 to 3 minutes before turning and browning on the over side. This will allow the scallops to form a brown crust. Turn and cook for an additional 2 minutes. Remove from skillet and serve topped with lime juice and zest.
