This is my favorite kale recipe. The preparation is easy and produces a savory side dish.
Serves: 4
3 strips of bacon cut into small pieces
¼ cup onion chopped
½ cup chicken broth
1 large bunch of kale leaves
Cook bacon in a large saucepan. Remove bacon and drain on a paper towel. Add onion to bacon grease and cook until iridescent. Pour chicken broth into saucepan and bring to a boil. Prepare kale by removing stems and backbone. Tear kale into pieces and add to boiling broth. Cook for about 10 minutes leaving kale slightly crunchy. Serve topped with bacon.
