Seafood Salad

 A mixed greens seafood salad with a twist!

Get ready for vibrant flavors, textures, and a perfect light lunch or satisfying dinner.

Let’s start with the base! I’m using a spring mix of greens for a variety of textures and tastes. But feel free to choose your favorite mix!

I like to cut my lettuce and veggies into bite size pieces, so that I get all the flavors in one bite. I eat my salads with a soup spoon for these tasty bites.

For veggie crunch and flavor I am adding onion for a bit of bite, cauliflower for crunchiness, and cucumber for coolness along with radishes and celery.

Today I am using Surimi Seafood flaky style.  You can use tuna, chilled shrimp or salmon pieces. I cut these into bite size pieces too.

We’ll dress our salad with a homemade lemon dill yogurt dressing. Light, flavorful, and oh-so-good! I use organic greek yogurt and add my freshly squeezed lemon juice. Then I add dill weed, garlic powder, salt, pepper, and a bit of cajun spices to elevate the entire dish. Whisk these together well and add to your salad.

For my extra special topping I use French’s Crispy Onions.

Gently toss everything together. Now you have a healthy salad that is under 400 calories and super tasty.

Bonus Tip!

Want to add a touch of luxury? Crumble some creamy goat cheese or Feta over your finished salad. Add some avocado that has been cut into bite size pieces. It’s an indulgence you deserve!

Seafood Salad – Tasty And Healthy

1 1/2 cups Mixed salad greens chopped 14 Calories

1/4 cup cauliflower, chopped 6 Calories

1/8 cup radishes, chopped 2 Calories

1/8 cup onion, chopped 4 Calories

1/4 cup cucumber, chopped 2 Calories

1/4 cup celery, chopped 8 Calories

1/4 avocado, chopped. 120 Calories

2 sticks of Surimi Seafood Sticks or 1/2 cup Surimi Seafood Flaked. 70 Calories

1/3 cup Greek yogurt 50 Calories

2 tbsp. Lemon juice 6 Calories

1 tsp. Garlic powder

1 tsp. Dill weed

1/2 tsp. Creole Seasoning

2 tbsp. French’s Onion Rings. 45 Calories

327 total calories

Chop your greens and veggies into bite size pieces. Then add your Surimi Seafood flakes. Now mix your dressing in a small bowl by adding the Greek yogurt and lemon juice. Next add garlic powder, dill weed and Creole Seasoning. Sprinkle with salt and pepper to your taste. Whisk this together and add it to your salad. Lightly toss the salad and top with French’s Onion Rings.
