2 Tbsp. Extra Virgin Olive Oil
1 Tsp. Anchovy paste
1 Tsp. Oregano
¼ Cup Dry White Wine
1 Clove of Garlic thinly sliced
3 Tbsp. Flat Leaf Parsley Chopped
4 Thin slices of Red Onion
½ Cup of Castelvetrano olives sliced
2 Cod Fillets 4 oz. each
Salt & Pepper to Taste
Mix first six ingredients forming a dressing. Then lay onion slices on bottom of baking dish along with olives. Put the Cod on top of these and then pour the dressing mixture on top. Salt and pepper the dish to taste. Bake at 375 degrees for 12 minutes or until fish is flakey.
