This tangy smoked salmon pasta salad is a great summer meal.
Servings: 4
4 cups cooked Penne pasta, cooled
8 oz. wild smoked salmon
½ cup mayonnaise
1 fresh lemon juice and 2 tsp. finely grated peel
2 cloves of garlic, minced
4 oz. goat cheese crumbles
4 cups romaine lettuce
4 tbsp. capers
Salt and Pepper
Mix well the mayonnaise, garlic, lemon juice and grated peel to form dressing. In a large bowl combine pasta, smoked salmon, goat cheese, and capers. Toss well with the lemon dressing. Tear the romaine lettuce into bite size pieces into four bowls. Top with the pasta salmon mixture. Salt and pepper to taste.
