The best vinegar coleslaw is a refreshing change from the standard mayonnaise based slaws.
Servings: 4
½ head cabbage
2 tbsp. white vinegar
2 tbsp. extra-virgin olive oil
Salt and fresh ground pepper to taste
In medium bowl whisk together vinegar, oil, salt and pepper. Thinly slice shreds of the cabbage and add to the dressing. Toss and let sit at room temperature for at least 30 minutes before serving.
