Vickie’s lemon sugar cookies are the best I have ever tried. She says her Aunt passed this recipe to her when Vickie was a young girl. She has made them ever since and gets rave reviews.
Servings: 3 ½ dozen
2 ½ cups flour
1 tsp. baking soda
1 tsp. cream of tartar
¼ tsp. salt
1 cup butter, softened
1/2 tsp. vanilla extract
1/2 tsp. lemon extract
2 cups sugar
3 egg yolks
Preheat oven to 350 degrees. Combine first four ingredients while stirring and then set aside. Ina mixing bowl, cream butter and extracts. Add sugar gradually and cream until fluffy. Next mix in the egg yolks. Slowly add dry ingredients a fourth at a time while mixing. Form dough into 1 inch balls and bake on a non-greased cookie sheet. Bake in 350 degree oven for 12 minutes. For a crunchy cookie, bake a little longer until the tops are golden brown.
