This zesty tomato, radish and mint salad will become one of your summer favorites. The lemon and Dijon mustard dressing gives this salad a real zip. It is topped off with chopped walnuts.
Servings: 4
4 tbsp. extra-virgin olive oil
2 tbsp. fresh lemon juice
1 tbsp. rice vinegar
1 tbsp. Dijon mustard
Salt and pepper to taste
1 cup of radishes, thinly sliced
1 ½ cups of cherry or grape tomatoes, halved
¼ cup mint, chopped
4 scallions thinly sliced
¼ cup walnuts, toasted and finely chopped
In a large bowl, whisk the olive oil, lemon juice, Dijon mustard, salt and pepper until well blended. Stir in the radishes, tomatoes, mint and scallions. Top with walnuts.
