Garlic Parmesan Spaghetti Squash

Spaghetti or squash, this is a healthy and delicious twist on classic spaghetti using spaghetti squash.

I will show you how to easily prepare this delicious low carb dish with the taste of a comfort food.  Why would you want to eat spaghetti squash?  Because it is tasty, loaded with nutrients and very low in calories.  It is a great substitute for a pasta which is loaded with calories. You have got to give this delicious healthy recipe a try!  

So healthy and makes so much you can freeze some of it and have it later.

 First, we’ll preheat our oven to 400°F (200°C) and line a baking sheet with parchment paper.

Now, grab your spaghetti squash. Wash it and poke holes into it. Put it on the baking sheet and bake for 10 minutes. This will soften the hard outer shell and allow you to easily cut it in half lengthwise. Scoop out those pesky seeds, then drizzle the flesh with olive oil and sprinkle with some salt and pepper. Don’t forget to place the squash halves cut-side down on the baking sheet.

Pop the squash in the oven and let it roast for 20-30 minutes, while we get started on the delicious garlic butter sauce.

In a large skillet over medium heat, melt that butter. Then, add the minced garlic and cook it for about a minute, until fragrant. We want that garlicky goodness without burning it.

By now, your squash should be perfectly roasted. Take it out of the oven and let it cool slightly. Here comes the fun part! Use a fork to scrape the flesh and create those spaghetti-like strands.

Add the fluffy spaghetti squash to the pan with the garlic butter. Toss it all together to make sure every strand gets coated in that yummy sauce.

Almost there! Now, let’s remove the pan from the heat and stir in the grated Parmesan cheese. We can add a little more salt and pepper for an extra flavor boost.

For a final touch, you can garnish your Garlic Parmesan Spaghetti Squash with some fresh chopped parsley. But really, it’s delicious any way you serve it!

Garlic Parmesan Spaghetti Squash

1 medium spaghetti squash (about 2-3 pounds)

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

4 cloves garlic, minced

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (optional)

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the spaghetti squash: Wash the squash and poke holes with a fork.  Place the squash on the baking sheet and bake for 10 minutes.  Then remove from the oven and cut it lengthwise in half. Scoop out the seeds with a spoon. Drizzle the flesh of the squash with 1 tablespoon olive oil, then sprinkle with salt and pepper. Place the squash halves cut-side down on the prepared baking sheet.

Bake the squash for 20-30 minutes, or until a fork easily pierces the flesh.

While the squash roasts, prepare the garlic butter: In a large skillet over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute, or until fragrant, be careful not to burn the garlic.

When the squash is tender, remove it from the oven and let it cool slightly. Using a fork, scrape the flesh of the squash to create spaghetti-like strands. Add the spaghetti squash to the pan with the garlic butter. Toss to coat the squash evenly.

Remove the pan from heat and stir in the grated Parmesan cheese. Season with additional salt and pepper to taste. Garnish with chopped fresh parsley, if desired. Serve immediately.
