Healthy Potato Salad
Do you love potato salad like I do? Well I have found a healthy potato salad for you to try. It is loaded with magnesium and potassium. These are ingredients which are important to me to help ease my leg cramps and keep my blood pressure down. I normally avoid potatoes because I am pre-diabetic. However, this potato salad is full of healthy fiber. When you eat fiber and then a carb such as potatoes, the fiber slows down the digestion of the potatoes. They do not turn to sugar so quickly. This potato salad contains radishes, cucumbers, onions, avocado, fresh herbs, oh and yes potatoes. Check out the recipe and see what you think!
What’s for Dinner?
Do you ever have those days that you just struggle to figure out what you want to have for dinner? Nothing really sounds good. I would like to have something healthy, but also tasty. I have plenty of frozen seafood in the freezer, but that is not appealing to me today. While standing staring into the pantry, I noticed several cans of beans. That is when it hit me! I have great ingredients to create beans and rice. I have beans, rice, Spanish Chorizo, chopped tomatoes, onion and garlic. Oh and let’s not forget the leftover baguette sitting on the counter. Helpful Cooking Trivia
Everyone needs some helpful cooking trivia or hints from time to time. So I decided to share with you some of my cooking tricks. For Example: Store fresh ginger in the freezer. When you are ready to use it, the peel can be easily scraped off while frozen. It grates or slices nicely. Return it to the freezer to store for future use. Check out more hints here: Cooking Trivia
