Tomorrow is the 4th of July and friends and family will gather. I have many memories of our family gatherings on the Fourth. We would grill hamburgers and hotdogs. Someone would make potato salad and baked beans. Our desert would be either watermelon or homemade ice-cream. My sister, cousin and I would always produce a play for our families entertainment. Those were the good ole days. My celebration tomorrow will be with friends. I will be grilling Balsamic Glazed Baby Back Ribs. These ribs are rubbed with a variety of Italian spices and refrigerated overnight. They will bake in the oven for two hours, then I will paint them with balsamic vinegar and grill for 4 or 5 minutes. These awesome ribs will be served with Moma’s Scalloped Potatoes and my friends Baked Beans. I will also prepare a Mango-Cucumber Salad with Mint. I found this recipe on Food & Wine Magazine webpage. It is a little late to use these recipes for your celebration, but you may want to try them out this summer for some other special gathering. I hope your 4th of July is special.

The Best Fish Stew by Denise
This has got to be the ultimate fish stew with cod and andouille combined with fennel. This is the first time I have ever cooked with fennel, so I decided to try it with a combination of sweet spices and hot spices. I started by sautéing my fennel in olive oil for about two minutes. I then added my garlic and cooked an additional minute. I decided this stew needed a dry white wine so I poured in one and a half cups and reduced it by half. To provide the good fish stew taste I added clam juice. I tasted it and decided it needed something acidic so I added fresh lemon juice and zest of lemon. Next I added the spices. After simmering for a few minutes I added the cod and smoked chicken andouille. I tasted the broth and I was very pleased with the result. To top it off I added chopped flat leaf parsley. Next I poured it in the bowl and devoured it along with a glass of Pinot Gris and some sour dough bread for sopping up the tasty juices. I am really proud of myself on this one. And by the way, I decided I liked fennel.
Meatloaf Is My Comfort Food
There is nothing as good as a flavorful meatloaf with brown gravy. My meatloaf is special because of the mixtures of ground beef, veal, and pork along with some fat back and prosciutto. The spices are also a nice mix of fennel, cinnamon, cardamom, oregano, red crushed pepper, and garlic. The hot spices combined with the sweet spices make a nice blend. I personally don’t care for tomato sauces or tomato gravies on my meatloaf. But give me a brown gravy meatloaf and I am in heaven. I experimented with red wine gravy which is shown in the picture. I decided I still prefer my brown gravy recipe.
Are You Ready For Grilled Shrimp with Apple Cucumber Salad
Let’s get the grill warmed up for this tasty grilled shrimp recipe. The shrimp seasoned with smoked paprika, salt and pepper is perfect for a summer evening. I always use a fish basket to grill my shrimp so that it is easy to turn all at one time. You will also be charring scallions. These will only take about 30 seconds on each side. So I recommend putting them in the fish basket first and then when finished grill the shrimp. The Granny Smith apple, English cucumber and the green bell pepper are all julienned. They are then coated with a tangy dressing made of olive oil, lime juice, sherry vinegar, and Dijon mustard. The salad is placed on a platter topped with the scallions and shrimp. Extra dressing is drizzled over the top. This combination of shrimp, salad and the tangy dressing is mouthwatering. Grilled corn on the cob or roasted potatoes is a nice accompaniment.
