Usually around Wednesday I start planning for my weekend meals. Depending on my mood, I will choose a recipe that is easy or challenging. I try to make most of my meals healthy, so I eat fish at least three or four times a week. So what did I choose to make: Braised Salmon and Asparagus.
This flavor packed meal is also easy to prepare. Basically there are two steps: First is making the sauce by sautéing your onion and garlic in olive oil. After adding your wine and reducing it by half, you stir in the anchovy paste. Now you are ready for step two. Place the asparagus and salmon topped with sliced lemons in the pan. Cover it tightly and braise in the oven at 300 degrees for about 10 minutes. You now have a tasty and healthy dinner.

Mom Is Cooking Again
Darby says: “Mom is cooking again. The chicken in this one smells really good. She talks to herself when she is cooking. I think maybe she is afraid she will forget something. If she would just trust me I would remind her. Today she is cooking Chicken and Fresh Fruit Salad. She eats this one as if it was a comfort food. This is on her menu even when we are not having company. Go figure. She says the nutty warm flavor of the ginger and curry, along with the chicken and fresh fruit makes her want to eat seconds. I’m okay with her eating this if only she would share the chicken with me. Once in a while she accidently drops a piece on the floor and I grab it up before she can get there. But since you readers are human, you really should try this recipe and see if you feel the same as her.”
Prepare Ahead A Healthy Dinner
Today my friends came over to play pinochle and then stay for dinner. I knew my dish needed to be one I could mostly prepare ahead of time. So I chose Miso Chicken and Rice Salad Bowl. I made up the Miso sauce for painting on the chicken tenders and stored in the refrigerator. Then I made my Thai dressing which can stay at room temperature. I washed my lettuce, tomatoes and cucumber in my vinegar water solution. Then tore my lettuce into pieces, cut my tomatoes in half and sliced my cucumber. I put these into the refrigerator for later. I next measured out my rice and rinsed it. I placed my rice in the cooking pan with the measuring cup for the water sitting next to it. I placed racks on my baking sheet for broiling the chicken tenders. Now I am ready to cook my rice and chicken and serve my ingredients for the bowl.
Dinner Guests
It is the weekend and the perfect time for entertaining. But what are we going to serve? It would be nice if the menu could be simple and something I can prepare ahead of time. I also want to serve a dish that is a little out of the ordinary but very tasty. These are the thoughts that go through my mind as I prepare my menu for my dinner guests. One of my recent hits with my dinner guests was Ahi Tuna Steak with Warm Romanesco Salad. I sautéed the Tuna Steak for about two minutes on each side in olive oil with a little butter for a medium rare result. This was a nice partner with the warm, crunchy nutty tasting Romanesco Salad. The roasted Romanesco and potatoes can be prepared ahead of time and then roasted while you entertain your guests. The lemon juice and olives provide a nice acidic finish. My guests always want a copy of this recipe. Give it a try and be ready for compliments.
Cook While You Are Away – Slow Cooker
Today we have slow cooker recipes. My sister made a request to add my favorite slow cooker recipes for her granddaughter’s boyfriend. He has just moved into an apartment and is going to be cooking with a slow cooker. I only have two recipes that I routinely use: Barbecue Pulled Chicken and Southern Mississippi Roast. Both of these recipes are excellent and work well for large crowds. I like to toast buns and let my guests serve themselves the Barbecue Pulled Chicken. I also make this recipe with taco sauce instead of barbecue sauce. I serve it with corn and flour tortillas along with my cilantro slaw recipe. You can make the meal complete by serving a heated mixture of black beans, fresh corn cut off the cob, chopped fresh tomatoes and sriracha sauce.
