If you want a recipe for meatballs and sauce to die for, this is it! The meatballs have a sumptuous base of ground beef, ground pork and bacon (or pancetta). The savory packed herbs of fennel, oregano, red pepper, parsley and garlic punch up the flavor. The sauce has some special ingredients too. My Breakfast Casserole
My nephew has an annual gathering on Labor Day at the cabin on the lake. Being his favorite aunt, I am invited. We all take turns with meals. My go to for this event has always been my breakfast casserole made with chicken sausage and polenta. Everyone enjoys this tasty casserole and it is a hit for the gluten free attendees. When I was 21 and recently married, we entertained our first guests. I prepared Chicken Kiev for our protein. I served it with potato dumplings, steamed broccoli, and cauliflower salad. This was a new recipe for me, but fortunately it was a hit! This flavorful chicken breast recipe causes you to want to eat more. The skinless flattened chicken fillet is rolled with a dab of butter inside. This creates a very tasty chicken roll which is breaded and sautéed until golden brown. Today let’s try a new recipe that is healthy and tasty: Chicken Adobo. Chicken Adobo is a healthy choice for a main course for your dinner. The marinade is a nice mixture of coconut milk with the tang from vinegar and heat from Tai chiles. It uses skinless chicken thighs and the marinade is strained and simmered to create a sauce. It is Gluten free and Keto friendly. I like serving this with rice and pouring the sauce on top.
Light & Healthy Dinner – Shrimp
Looking for a light healthy dinner? Try Asian Shrimp and Slaw. It is a refreshing combination of shrimp and slaw in a spicy Asian dressing. There are roasted cashew or peanuts on top of the mixture which makes for a nice crunchy salad. This is a great summer time meal. I make it with the cilantro and nuts on the side allowing my guests to choose to include these items.
